My Journey to Optimal Health Through Raw Nutrition

Introduction

My name is Iván Sáfár, and I hold degrees in Agricultural Engineering and an MBA in General Management, both from Hungary’s elite universities. I began my career in public administration and later moved into food production and trade, where I gained extensive experience and led various transformative initiatives. I have always been deeply interested in human nutrition and the question of what constitutes the ideal diet—this curiosity has guided much of my personal journey.

In the late 1990s, I started experimenting with a vegetarian diet to address minor health issues. However, because these early attempts were mostly cooked vegetarian meals, they did not provide lasting results, and I eventually gave them up. Later, I explored raw vegan nutrition, reading extensively on the subject. It quickly became clear, however, that this approach also had limitations. Simply shifting the proportions of the diet was not enough—the body needs time to rebuild itself from new, healthier foods.

I realized that the body requires proper calorie intake and mineral balance; otherwise, cravings for cooked foods persist. I learned that processed and cooked foods remain highly desirable for a long time and create a form of dependency in the body. Only through consistent, high-volume fruit consumption do these cravings fade, allowing the body to transform.

A breakthrough moment came in 2006 when I discovered Dr. Douglas Graham’s 80/10/10 approach. This method provided a new perspective and set me on the path of raw nutrition. Suddenly, many questions were answered, and the pieces of the puzzle fell into place. Today, I follow this method, adapted to Hungarian conditions and complemented by my personal experiences.

My goal is to help those interested in nutrition by sharing both practical and theoretical knowledge, enabling them to successfully and sustainably apply the benefits of a raw diet to improve their quality of life. I firmly believe that the optimal human path lies in a 100% raw, biologically appropriate diet. Of course, we are all different, and not everyone aims for the highest standard, but even so, anyone can experience excellent health and a high quality of life for decades.

Optimal health depends not only on nutrition but also on the quality of the air we breathe and the water we drink, as both directly affect the body. Achieving the best quality of life requires harmonizing these three essential factors.
